Scott’s Italian Sausage Soup

Ingredients

 375 g Italian sausage (uncased)
 1 diced onion
 ½ diced green pepper
 3 medium carrots, sliced
 3 celery stalks, chopped
 5 cups homemade broth
 2 cups plain tomato sauce (not pasta sauce! not marinara!)
 1 tbsp cooking oil
 12 tsp garlic salt (to taste, can be added late in the recipe)
 ½ tsp pepper
 1 tbsp dried basil
 ½ tsp cayenne or Indian chili powder (optional)
 1 tsp garlic powder (optional, to add garlic without salt – fresh garlic is too rich)
 1 tsp garlic sriracha (optional)

Directions

Add oil to large pot, add sausage and cook over medium heat for 5 to 6 minutes.

Add diced onion and cook for another 5 to 6 minutes

Add carrots, green pepper, and celery. Mix well and cook for an addition 5 minutes, stirring often.

Add broth and tomato sauce, stir well. Increase heat to medium-high and bring to a boil. Reduce heat and simmer.

Stir in garlic salt, dried basil. You can add garlic powder if you want. You can add some heat with either a half teaspoon of cayenne or a teaspoon of garlic sriracha. Simmer for a few minutes more.

Add pepper and salt to taste. Ready to serve.
