Place pork and seasonings all together in a large glass bowl.
Mix with your hands for 30–45 seconds, until the mixture looks evenly seasoned and slightly tacky
Divide into 8 equal patties. Press a small thumb dimple into the center of each patty (helps them cook evenly and prevents puffing).
I divide the meat into half, then each half in half, and then split the remaining pieces in half to form balls. I flatten the balls and work them from the middle out into patties.
Cook in a frying pan for 3 minutes per side on medium heat. You can freeze flat on a tray then bag them for future use. To cook from frozen, defrost in microwave for 30 seconds before frying.
