Scott’s Mild Salsa

Ingredients

 10 cups prepared tomatoesThe quantity of tomatoes will vary by type. Anywhere from 5 lbs to 8lbs will produce enough prepared tomatoes.
 2 cups diced sweet or spanish onion
 1 cup yellow onion
 2 cups diced green pepper
 4 finely chopped jalapeno peppers
 8 large garlic cloves, minced
 2 tsp cumin
 2 tsp black pepper
 1 tsp chili powder
 3 tbsp canning saltSub kosher salt, do not use table salt
  cup chopped, fresh cilantro
 1 cup sugar
 1 cup clear, fresh apple cider vinegar
 ¼ cup bottled lime juice
  cup bottle lemon juice
 1 small can of tomato paste
 2 cups plain tomato sauce (do not use pasta sauce, there should be very few ingredients and no sugar added)I prefer Hunt's

Directions

Prepare the tomatoes

Peel the tomatoes (See instructions for peeling here: https://thegillardsrecipebox.ca/how-to-peel-tomatoes/)

Dice and drain the tomatoes. You don’t want to squeeze the flavour out of your tomatoes but you don’t want runny salsa either, so you have to remove some of that water.

Cook the salsa

Mix tomatoes, green pepper, jalapenos, onion, garlic, and tomato sauce in a large pot.
