Scott’s Taco Seasoning
3 Chili PowderThis is the base ingredient, do not adjust.
1 Garlic Powdercan go as low as 0.25 parts
1 Onion Powdercan go as low as 0.25 parts
1.50 Cumincan go as low as 1 parts
1 Paprikacan go as low as 0.5 parts. Try different varieties. Try higher quality.
0.50 Dried Oreganocan go as low as 0.25 parts
0.75 Saltcan go as low as 0.25 parts. This recipe is salty; start small and adjust quantity to taste at the end of preparation.
1 Black Peppercan go as low as 0.25 parts
Optional
0.25 Indian Chili Powder or Cayenne Pepper.This is the heat, adjust accordingly. You can substitute dried red chili pepper flakes.

Combine ingredients except salt, pepper, and heat in a glass bowl.

Blend ingredients well so there’s a mostly-consistent red colour.

Add salt, pepper, and heat. Mix well and adjust to taste.

A few tablespoons at a time grind the ingredients together in a mortar and pestle. Take your time to ensure consistent granules. As each batch is completed empty the seasoning into a jar. Once all ingredients have been ground and emptied, shake well to mix and taste. You can still add salt if necessary.
