Joe’s Maple Spinach Salad

Ingredients

Creamy Maple Dressing
 ¼ cup Helman’s mayoScott: It is my opinion you should not substitute
 3 tbsp real maple syrup
 1 tsp white vinegar
 2 tsp lemon juicebottled, from concentrate recommended
 1 pinch salt to taste
 1 pinch pepper to taste
Spinach Salad
 baby spinachUse as much as you need, I use 4 cups loose
 ¼ cup red delicious applefinely diced
 ¼ cup mushroomchopped small, no big pieces
 ¼ cup bacon crumble
 ½ cup shredded mozzarella Level up with small diced mozzarella

Mix all ingredients together starting with the 3 tbsp of maple syrup. Since syrup varies in quality and strength, you may have to use a lot more or just the minimum. This dressing is ready when the flavours are balanced – it should be maple sweet with maple flavour but it should not have an easily identifiable mayo, lemon, or vinegar flavour. There should be enough maple syrup to darken the colour a bit.

Toss spinach, mushroom, and apple.

Add dressing in batches. Toss lightly until everything is coated. Use only as much dressing as you need. You can save the remaining dressing in an air tight container for a day or two.

Distribute in bowls, top with mozzarella, bacon crumble, and croutons
