Chocolate Cupcakes

Ingredients

 1 ½ cups all purpose flour
 1 cup buttermilk(or 1 cup milk – 1 tbsp apple cider vinegar, whisk, let stand 5 minutes)
 1 tsp vanilla
  cup vegetable oil
 ½ cup Dutch process cocoa
 ¾ tsp baking soda
 2 eggs
 ¾ cup white sugar

Preheat oven to 325 degrees. In a medium bowl, combine dry ingredients until well blended, set aside

In a large glass bowl, combine sugar, buttermilk, oil, and egg. Beat until just combined.

Gradually add the dry ingredients to the wet mixture in three or four batches.

Line a cupcake pan. Fill each cup to 3/4 full. Bake for 2- – 24 minutes. The toothpick test is the best way to judge when done.
